Brazilian Chicken Curry

Slow Cooker

Very easy slow cooker recipe inspired from a high protein Facebook post and adapted to fit the ingredients I had to hand. Worth repeating.

4 to 6 servings


  • 1kg Skinless Chicken Breasts

  • 1 onion

  • 100g peanut butter

  • 400ml coconut milk

  • 1 Lime

  • 1 tsp dried crushed chillies

  • 3 tsp cornflour

  • 1 tsp tumeric

  • 1 tsp garlic powder

  • Chicken Stock pot


  1. Dice the chicken into bite sized pieces and add to the slow cooker

  2. Finely chop the onion and add to the slow cooker

  3. Add the juice and zest of the lime to the slow cooker

  4. Add all remaining ingredients to the slow cooker and mix well

  5. Cook on LOW for 5 hours or until the chicken is cooked

  6. Serve with rice or pasta

Tip: this is medium hot, the heat can be adjusted by varying the amount of chilli.
