Chicken and Rice Soup
Slow Cooker
A simple and filling soup which is handy for using up spare chicken. I saw this on the 'Whats for Tea' YouTube channel (very good).

6 servings @ 240 calories
Ingredients
2 Medium potatoes
2 Medium carrots
1 Large onion
300g Cooked shredded chicken (red or white meat)
200g Long grain white rice
A handful of fresh parsley
4 Cloves garlic
Salt & Pepper (to taste)
2 Tsp Mixed Herbs
1.5 pts Chicken stock
1 pt Water
Steps
Peel and dice the potatoes & carrots
Finely chop (or crush) the garlic
Wash the rice
Chop the parsley
Add all incredient to the slow cooker
Cook on HIGH for 8 hours
