Chicken and Rice Soup

Slow Cooker

A simple and filling soup which is handy for using up spare chicken. I saw this on the 'Whats for Tea' YouTube channel (very good).

Ingredients

  • 2 Medium potatoes

  • 2 Medium carrots

  • 1 Large onion

  • 300g Cooked shredded chicken (red or white meat)

  • 200g Long grain white rice

  • A handful of fresh parsley

  • 4 Cloves garlic

  • Salt & Pepper (to taste)

  • 2 Tsp Mixed Herbs

  • 1.5 pts Chicken stock

  • 1 pt Water

Steps

  • Peel and dice the potatoes & carrots

  • Finely chop (or crush) the garlic

  • Wash the rice

  • Chop the parsley

  • Add all incredient to the slow cooker

  • Cook on HIGH for 8 hours
