Chicken Thigh Casserole

Slow Cooker

Very easy to make and something to do with those chicken thighs which appear on the reduced shelf so often.

2 servings @ 575 calories


  • 500g Chicken Thighs (with or without bone) 

  • 1 Can Condensed Mushroom Soup

  • 1 Large Carrot

  • 2 Portions New Potatoes

  • 1 tsp Paprika

  • 1 tsp Mixed Herbs


  1. Add the potatoes to the bottom of the slow coooker

  2. Dice and add the carrot

  3. Remove the skin from the chicken and add to the slow cooker

  4. Add the remaining ingredients

  5. Cook on LOW for 6 hours or until the chicken is fully cooked
