Freezing Rhubarb
Freezer
Rhubarb is very much a love it or hate it fruit, this means that when it is in season it will frequently be found on the reduced shelf in the supermarket. This is not a problem as it can easily be frozen raw and will keep for up to a year.
Simply cut the stalks into one-inch pieces with a large knife and freeze for several hours on a greaseproof or baking paper lined tray before transferring to freezer bags.
