French Lentil Curry
Slow Cooker
A nice winter recipe for French Lentils (Lentille verte du Puy). Although there are quite a few ingredients, it is very straightforward and should be served with rice. Due to the long cooking time, no pre-soaking of the lentils is required. This recipe is based on an original found on the prettybee.com website.

Ingredients
1 can Coconut Milk
1 Yellow Pepper
1 Onion
3 Cloves Garlic
2 tbsp olive or sunflower oil
1 1/2 Cups French Lentils (dried)
3 tbsp Tomato Puree
3 tsp Curry Powder
2 tsp Sugar
2 tsp Garam Masala
1 tsp Garlic Powder
1 tsp Salt
1 tsp Cumin
1 tsp Ground Ginger
1/4 tsp Ground Pepper
2 1/2 Cup Water
Steps
Rinse the lentils in a sieve
Finely chop the onions & garlic
Add all of the ingredients to the slow cooker and mix
Cook on LOW for 5 hours
Tip: You can adjust the heat of this curry to your taste by using either mild or hot curry powder.
Tip: This is quite a 'healthy' recipe but if you want to reduce fat content and calories you can use low fat coconut milk but personally, I believe that the full fat product produces a noticeably better taste in this case.
