French Lentil Curry

Slow Cooker

A nice winter recipe for French Lentils (Lentille verte du Puy). Although there are quite a few ingredients, it is very straightforward and should be served with rice. Due to the long cooking time, no pre-soaking of the lentils is required. This recipe is based on an original found on the prettybee.com website.

Ingredients

  • 1 can Coconut Milk

  • 1 Yellow Pepper

  • 1 Onion

  • 3 Cloves Garlic

  • 2 tbsp olive or sunflower oil

  • 1 1/2 Cups French Lentils (dried)

  • 3 tbsp Tomato Puree

  • 3 tsp Curry Powder

  • 2 tsp Sugar

  • 2 tsp Garam Masala

  • 1 tsp Garlic Powder

  • 1 tsp Salt

  • 1 tsp Cumin

  • 1 tsp Ground Ginger

  • 1/4 tsp Ground Pepper

  • 2 1/2 Cup Water

Steps

  1. Rinse the lentils in a sieve

  2. Finely chop the onions & garlic

  3. Add all of the ingredients to the slow cooker and mix

  4. Cook on LOW for 5 hours


Tip: You can adjust the heat of this curry to your taste by using either mild or hot curry powder.


Tip:  This is quite a 'healthy' recipe but if you want to reduce fat content  and calories you can use low fat coconut milk but personally, I believe  that the full fat product produces a noticeably better taste in this  case.
