Red Lentil Chilli
Slow Cooker
About as easy as it gets, cheap and vegan friendly. Also freezes well for several months. I found this recipe on www.runningonrealfood.com and usually have some in the freezer.

Ingredients
1 Medium onion, diced
2 Medium peppers, any colour, diced
2 Carrots, peeled and chopped
1Jalapeño, deseeded if you don't like it too strong
3 Cloves garlic, minced
2 Tbsp chilli powder
2 Tsp ground cumin
1 Tsp oregano
1 Tsp paprika
2 cans diced tomatoes (14oz each)
2 Tbsp tomato puree
500ml Vegetable stock (hot)
2 cups (370 g) dry red lentils
Salt & pepper, to taste
Steps
Rinse the lentils
Add everything into the slow cooker
Mix
Cook on LOW for 6 hours
