Red Lentil Chilli

About as easy as it gets, cheap and vegan friendly. Also freezes well for several months. I found this recipe on www.runningonrealfood.com and usually have some in the freezer.

Ingredients

  • 1 Medium onion, diced 

  • 2 Medium peppers, any colour, diced

  • 2 Carrots, peeled and chopped 

  • 1Jalapeño, deseeded if you don't like it too strong

  • 3 Cloves garlic, minced

  • 2 Tbsp chilli powder

  • 2 Tsp ground cumin

  • 1 Tsp oregano

  • 1 Tsp paprika

  • 2 cans diced tomatoes (14oz each)

  • 2 Tbsp tomato puree

  • 500ml Vegetable stock (hot)

  • 2 cups (370 g) dry red lentils

  • Salt & pepper, to taste

Steps

  1. Rinse the lentils

  2. Add everything into the slow cooker

  3. Mix

  4. Cook on LOW for 6 hours
