Chicken and Pineapple
Slow Cooker
Extremely easy, nice and sweet with inspiration from the Chinese takeaway menu.

Ingredients

1 Pack (450g) Skinless, Boneless Diced Chicken Thighs

½ tsp Black Pepper
-
¼ tsp Salt
-
½ tsp Chinese 5 Spices

2 Tins Pineapple Chucks in Juice (unsweetened)

2 Tbsp Light Brown Sugar
-
2 Tbsp Soy Sauce

Cornflour to thicken
Method

Brown chicken is a pan with a small amount of oil, this step is optional but does improve the flavour.

Place all ingredients in the slow cooker and cook on low for 5-6 hours until the chicken is tender and fullt cooked.

Remove the chicken and thicken the sauce slightly with a little cornflour (1-2 tsp).

Serve the chicken on a bed of rice and spoon the sauce over the top.
