Chicken and Pineapple

Slow Cooker

Extremely easy, nice and sweet with inspiration from the Chinese takeaway menu.


  • Makes: 4 portions

  • Preparation time: 15 minutes

  • Cooking time: 5-6 Hours


  • 1 Pack (450g) Skinless, Boneless Diced Chicken Thighs

  • ½ tsp Black Pepper

  • ¼ tsp Salt

  • ½ tsp Chinese 5 Spices

  • 2 Tins Pineapple Chucks in Juice (unsweetened)

  • 2 Tbsp Light Brown Sugar

  • 2 Tbsp Soy Sauce

  • Cornflour to thicken


  1. Brown chicken is a pan with a small amount of oil, this step is optional but does improve the flavour.

  2. Place all ingredients in the slow cooker and cook on low for 5-6 hours until the chicken is tender and fullt cooked.

  3. Remove the chicken and thicken the sauce slightly with a little cornflour (1-2 tsp).

  4. Serve the chicken on a bed of rice and spoon the sauce over the top.
